The World's Oldest Dessert: Ashure
Originating in present-day Turkey, "Ashure" or "Noah's Pudding" is often referred to as the world's oldest dessert. There are various recipes but the concept of the pudding dates back several centuries.
Legend has it that it was eaten by Noah and his family after they left the Ark following the flood, using ingredients found where they landed alongside some other ingredients they had taken with them on their journey.
Typical ingredients of Ashure include chickpeas, beans, wheat, grains, nuts, spices, and fruit. The resulting pudding is said to be both sweet and savoury, with a porridge-like consistency when warmed, and custardy when eaten cold.
The name, "Ashure" comes from the Arabic word for the number ten. It relates to the tenth day of the Islamic year in the month of Muharrem, when the pudding is traditionally cooked and shared with family and friends.
